Salads are easy to throw together, but sometimes it can be hard to come up with combinations on a whim, so I wanted to share one of my favorites! I make it in all varieties and variations, simply depending on what produce I have lying around. The more fruits and veggies, the better. Salad is surprisingly filling if you add enough healthy fats and fiber.
For this exact salad, I combine baby spinach and green romaine lettuce. Next, I add sliced apples, raspberries, cucumbers and seeds/nuts. I really like either shaved almonds, pumpkin seeds or sunflower seeds. My favorite dressing is Brianna’s Poppy Seed. Another great choice is combining balsamic vinaigrette, olive oil and a splash of Brianna’s.
This particular salad I’ve photographed doesn’t contain a protein source, but a great option is adding hard-boiled eggs, grilled chicken or a side like a meat or cottage cheese.
