The “juicing” trend is alive and well. While I make yogurt/protein smoothies semi-often, I’ve never really used “greens” in a beverage, until today. While I was making baby food in my Ninja blender, I realized I had a lot of spinach to use up by its expiration date, so I decided to give “green” juicing a try. All it took was the spinach and a few other ingredients. I ended up creating a delicious, satisfying and completely nutritional blend that I wanted to be sure to share for anyone looking for something new and refreshing. It’s kind of an ugly color, but don’t let that scare you.
ingredients [yields two servings]:
- .75 cups ice
- 1 cup [or more] mixed berries (frozen work best)
- 4 oz pure orange juice
- 2 cups spinach
- .25 cups flax seed (soak first)
Blend all ingredients and enjoy!
